Ingredients
- •2 Egg
- •180 g Sugar
- •3 tsp Vanilla Powder
- •150 g Butter
- •1 dl Milk
- •180 g Flour
- •2 tsp Baking powder
- •300 g Cream cheese
- •1.5 dl Heavy cream
- •3 tbsp Powdered sugar
- • Strawberries
Instructions
Muffins:
- Whisk together the eggs, sugar, and vanilla powder (2 tsp) until the mixture is light and fluffy.
- Melt the butter in a saucepan. Add the milk, remove from heat, and set aside to cool slightly.
- Sift the flour and baking powder together in a separate bowl to ensure even mixing.
- Gently fold the butter and milk mixture as well as the flour mixture into the egg mixture, stirring until you have a smooth batter.
- Fill the muffin cups 2/3 full and bake in the middle of the oven at 175°C for about 20 minutes, or until golden and cooked through.
Frosting:
- Beat the cream cheese, powdered sugar, and vanilla powder (1 tsp) until smooth and lump-free.
- Add the cream and whip until you get a smooth and stable frosting.
- Pipe the frosting onto the muffins once they have cooled and top with fresh strawberries.
