Ingredients

  • 2 Egg
  • 180 g Sugar
  • 3 tsp Vanilla Powder
  • 150 g Butter
  • 1 dl Milk
  • 180 g Flour
  • 2 tsp Baking powder
  • 300 g Cream cheese
  • 1.5 dl Heavy cream
  • 3 tbsp Powdered sugar
  • Strawberries

Instructions

Muffins:

  1. Whisk together the eggs, sugar, and vanilla powder (2 tsp) until the mixture is light and fluffy.
  2. Melt the butter in a saucepan. Add the milk, remove from heat, and set aside to cool slightly.
  3. Sift the flour and baking powder together in a separate bowl to ensure even mixing.
  4. Gently fold the butter and milk mixture as well as the flour mixture into the egg mixture, stirring until you have a smooth batter.
  5. Fill the muffin cups 2/3 full and bake in the middle of the oven at 175°C for about 20 minutes, or until golden and cooked through.

Frosting:

  1. Beat the cream cheese, powdered sugar, and vanilla powder (1 tsp) until smooth and lump-free.
  2. Add the cream and whip until you get a smooth and stable frosting.
  3. Pipe the frosting onto the muffins once they have cooled and top with fresh strawberries.
