Oven Baked Fruits

As the autumn chill begins to settle in, there’s nothing I crave more than a bowl of soft and warm fruits mixed with sweet berries and a scoop of vanilla ice cream. The scent of vanilla and cardamom fills the kitchen making the air almost as delightful as the taste itself. The fruit turns soft and lightly caramelized and the cool ice cream brings out every flavor perfectly. Simple ingredients that come together to create something truly special.

Sweet but Simple

Ingredients

  • 2 Apples
  • 2 Peaches
  • 2 dl Raspberries
  • 2 dl Blueberries
  • 2 dl Strawberries
  • 2 dl Blackberries
  • 4 tbsp Honey
  • 2 tsp Cardamom
  • 1 tsp Vanilla powder
  • Vanilla ice cream
  • Chopped nuts

Instructions

  1. Preheat your oven to 180°C.
  2. Prepare the fruit: Peel and slice the apples and peaches. Halve the strawberries and leave the other berries whole. Then place all the fruit in a large baking dish.
  3. In a small bowl, combine the honey, cardamom, and vanilla powder. Drizzle the mixture evenly over the fruit and toss gently to coat all the fruit.
  4. Bake for 20–25 minutes or until the apples and peaches are tender and the berries are soft.
  5. Serve warm with a scoop of vanilla ice cream and a sprinkle of chopped nuts on top.
