No Bake Cheesecake tart with Strawberries
This no bake tart is the perfect way to reuse leftover cake scraps and transform them into something delicious. With a soft crumbly base made from your leftover cake and a smooth creamy filling, it’s simple to make and absolutely delicious. Ingredients
- •200 g Cake scraps
- •80 g Walnuts
- •200 g Cream cheese
- •1 tsp Vanilla powder
- •30 g Powdered sugar
- •1 dl Lemoncurd
- •200 g Sliced strawberries
- •1 tbsp Strawberry jam
Instructions
The base:
Blend the leftover cake scraps and walnuts to a crumb, be careful not to overmix.
Filling:
In a bowl, beat the cream cheese, vanilla powder, and powdered sugar until smooth. Add the cream to the bowl and whip until stiff peaks form.
Glazed strawberries:
Place the sliced strawberries and strawberry jam in a saucepan. Heat gently for 2–3 minutes to coat the strawberries with a light glaze. This step is optional, you can also use the strawberries fresh.
Assemble the tart:
- Press the crumb into a tart pan to form an even crust.
- Spread the lemon curd evenly over the cake-walnut crust.
- Pip or spoon the cream cheese filling on top.
- Arrange strawberries on top (glazed or fresh).
- Garnish with fresh mint leaves and let it chill in the fridge for at least 1 hour before serving.
